2 tbsp. unsalted butter
3 tbsp. heavy whipping cream
1/4 tsp. kosher salt
  1. Place the granulated sugar in a 1-quart saucepan over medium-high heat, stirring constantly. Continue to stir while the sugar melts completely. It will clump in the beginning, but all the clumps will melt and it will start to turn a light golden brown. Once it is entirely melted, add the butter and stir until the butter melts. Then stir in the cream. Be careful—the caramel will rise up a bit in the pan. Let the mixture boil for 1 minute, stirring continuously.
  2. Remove the caramel from the heat, and stir in the salt. Pour into a container and refrigerate to help it cool. It should be firm, but still pliable.
