A sweet and sharp red cabbage and cranberry slaw complements this pork recipe nicely.

5-oz. boneless pork chops, fat trimmed
red onion, thinly sliced
small head red cabbage, cored and thinly sliced
2 tsp. fennel seeds
1/2 c. Dried Cranberries
1/4 c. balsamic vinegar
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Season the chops with ¼ teaspoon each salt and pepper and brown, about 2 minute per side; remove from skillet.
- Reduce heat to medium, add the remaining tablespoon oil, then the onion, cabbage, fennel seeds and ¼ teaspoon each salt and pepper and cook, covered, stirring once for 5 minutes.
- Add the cranberries and ¼ cup water and cook, stirring occasionally until the water evaporates.
- Nestle the chops in the cabbage mixture, drizzle with with the vinegar and cook until the chops are cooked through.
